Why are my cookies flat? 
It could be the French butter. French butter has a higher fat content than American butter so the recipe on the back of the Nestlé chocolate morsels may not work the same. Try adding a 1/4 cup more flour to the dry ingredients and chill the dough for an hour or so before making the cookies.

How many grams are in a stick of butter?
There are 113 grams of butter per stick. That's equivalent to half a cup.

How many grams are in a cup of flour?
1 cup of flour is approximately 125 grams.

Is cassonade the same thing as brown sugar?
Sort of, but it depends who you're speaking to! American brown sugar is known as vergoeise in  some parts of France. Cassonade is turbinado sugar or sugar in the raw But it can also mean brown sugar. . It has less moisture. I use sucre graeffe which has a slightly vegetable smell to it since it's beetroot sugar.

How can I make gluten free cookies? I use this basic flour mix from the Land O'Lakes website  (scroll down to the end of the recipe for a fail-proof GF flour mix). You can find all sorts of gluten free flours at Asian supermarkets (tapioca flour, rice flour, glutinous rice flour, corn flour, chic pea flour, lentil flour...). You can also order a good GF mix through the Dove Farms website. I personally don't like the GF flours that are sold in the healthfood section of the supermarket. They don't tend to work as well and have a grainy texture.

Where can I buy arm and hammer?
You can find bicarbonate de soude next to the salt at most supermarkets. I buy Arm and Hammer in the recognizable orange box at the Asian supermarket around the corner form my house.

What's the difference between lait concentré and lait condensé?
Lait concentré sucré is condensed sweetened milk. Lait condensé is evaporated milk.

Is French butter the same as American butter?
French butter has a higher fat content so you'll either need to slighty decrease your butter or slightly increase your flour to get your recipes right.

What French flour is all-purpose flour?
Type 55 and Type 65 are the most common flours available.

Where can I find molasses?
It's called mélasse in French. You can find it at organic stores - it's usually an import from the Netherlands.

Where can I buy buttermilk?
Buttermilk has various names in French: babeurre, petit lait or lait battu. You can also  buy Elben lait fermenté at North African stores or at major supermarkets.

Can I find fresh cranberries in France?
You can find frozen airelles at Picard. Or you can sometimes find Fresh US cranberries in November and December. Otherwise, get some dried ones.

Can I find canned pumpkin or pumpkin pie mix in France?
Nope but you can find frozen pumpkin purée at Picard.
